Florence


o   Most people speak English
o   Seems to be more Americans than Italians
o   Never know the beauty of the city until you find out how much history there is
o   Prices are not that expensive
o   Many different forms of entertainment
o   Felt safe enough to walk around by myself
o   City very clean- clean streets all of the time- shows the pride in the city
o   Enough to keep one busy for a long time
o   Train station allows close travel to other parts of Italy
o   The locals know the tourist will buy so the prices are high mercato central
o   The city is easy to navigate
o   Interesting to see how much power the Medici family had

Florence!

Being in Florence I would have expected to do more sight seeing than I have. This is a picture of the Duomo and the bell tower attached to it. I have still not been inside the Duomo, hopefully I will be able to go later on this week.

This is a picture I took while on the terrace of the Uffizi. I got a great view of the Palazzo Vecchio. The first time I had seen this was while on a walking tour. The walking tour is worth it. It helped me realize what all of the buildings were that I had been walking by the whole time I was in Florence.

The top of the Duomo. I can not wait to climb to the top. I believe the most ideal time to do this would be right before sunset. It would provide amazing views of the city.


Sidewalk chalk... Who would have ever thought that chalk could be so beautiful! I wish I would have been able to see the finished product.
This is one of the various markets! It it always hard to find the best bargain. It is also hard to tell which leather is real of fake.

They have the most random things at the markets. A favorite are the masks, they are everywhere!

This is the Medici Palace. It is so close to my apartment, without taking the walking tour I would have never known what it was.



It is interesting to see how one family took over Florence. The Medici Family has their family crest on a majority of the city. This is the church where their whole family is buried. There are no surviving Medici's
The baptistry is also very beautiful. It is directly in front of the Duomo. I am planning on waking up early this week to go to mass here.





This is the house where Dante lived. He was one of the most influential men in all of Italian history.


This is a replica of the original David statue. That is the exact place where the original was. It had to be moved into a museum in order to be kept from further deterioration.



The Uffizi before I went in! This is the only attraction I have been into since being in Florence. I am going to have a busy last week going to all of the museums and churches.

Parma and Modena

This is the parmigiano reggiano factory we went to. It was about a two hour bus ride from Florence.

This is where the whole process begins. Each of these huge vats only produce two wheels of cheese.

This is where the cheese is put to set. The salt and water mixture is what keeps the cheese sanitary.

This is how the cheese is formed into the wheel.


This is where the cheese is stored until it is ready to be sold. Each block of this cheese sells for between €500 and €700.
A close up of the wheel of cheese! Every stamp has a specific meaning depending on when it was made and when it is ready for sale.

This is the salting process. During this time it is salted and massaged over a period of time. The salt has to be taken off and put back on several times.

The tour of the balsamic factory! These barrels are never closed over the twelve years it is aged.

What the inside of the barrel looks like! This is a long drawn out process for it to get to this stage.

The balsamic factory that we toured! The tour guide was very interesting. I found the story about their family history and coat of arms very interesting. I like that it the whole family has a passion for balsamic vinegar making.


These are the bottles of balsamic vinegar sold at this specific factory. The 25 year aged cost €75 and the 12 year aged cost €47. The balsamic vinegar is worth the price. It is very good!

Cooking in Florence

Cheese Puffs!
Ingredients: flour, parmigiano, butter, lard, olive oil, backing powder
This was probably one of my favorite dishes we have made. It was so delicious!


Gnocchi di Patate and Pesto!
Ingredients: Potatoes, flour, egg yolks, salt, basil leaves, extra virgin olive oil, grana padano cheese, Pecorini Romano cheese, pine nuts, garlic, and salt
Pesto was surprisingly easy to make! I will be able to make it when I get back home. It will save me from buying the expensive one they sell at Publix.


Risotto con Bresaola e Bitto!
Ingredients: Carnaroli Rice, Bresaola (horse meat), bitto cheese, butter, onion, broth, wine and salt.
I was surprised by the taste of the Bresaola. I would never imagined horse meat to taste like that. I am not usually brave enough to try new things but I figured why not! The risotto is difficult to make because getting it just right takes a while and you want to make sure not to over cook it.

Pork Filet Confit!
Ingredients: pork fillet, extra virgin olive oil, red onion troprea, red wine vinegar, orange, rosemary, salt and apples.
My favorite part of the whole dish was the red onion and red wine vinegar jam. It added so much flavor to the dish. It is something that can go with so many other dishes like chicken or steak. It was also very simple to make, add the onions and red wine vinegar together and let it cook until the consistency is jam like.

Lasagna!
Ingredients: flour, eggs, salt, celery stalk, carrots, onions, bay leaves, ground beef, ground pork dry Porchini mushrooms, extra virgin olive oil, butter, tomato paste, pepper, white wine, beef or chicken stock, milk, and nutmeg
I was actually not impressed with how the lasagna turned out. I thought it would taste a lot better than it did. I do not think I will make this one again.

Inzimino di gamberi!
Ingredients: Swiss chard, shrimp, shallots, garlic oil, shrimp stock, tomato concasse', salt, and pepper.

Gnocchi alla Romana
Ingredients: milk, butter, semolina, grated parmigiano reggiano cheese, egg yolks, salt, and nutmeg
The first gnocchi was much better. I felt like this one was lacking flavor, it needed like sauce or something like this.
Fettuccine con rucola e gorgonzola
Ingredients: fettuccine, olive oil, mushrooms, tomatoes, rocket, gorgonzola, and pepper.
I think rocket is actually arugula. The taste of the Gorgonzola was very overpowering. If I make this dish again I will only add a small portion of the cheese.
Risotto al Tartufo
Ingredients: Carnaroli rice, white onions, extra virgin olive oil, chicken broth, butter, truffle paste, parmigiano reggiano cheese, and white truffle flakes.
It was my first time trying truffles and I was not sure exactly what to expect. I know that they are very expensive and highly coveted. I did not really taste anything different when trying this dish. I would have imagined the dish to have a more unique taste.

Beef fillet with balsamic vinegar sauce!
Ingredients: lean beef fillets, butter, extra virgin olive oil, balsamic vinegar, port sherry, flour, salt and pepper
This was the first time I had beef while being in Italy. It was very delicious!

Gelato fiordilatte and balsamic vinegar sauce!
Ingredients: Milk, sugar, fresh cream, vanilla, water, lemon juice and heavy cream.
I would have never thought of putting a balsamic caramel mixture on the top of ice cream! This is a recipe that I will definitely be making again. I can not put the ice cream maker I bought for my mom to work!

Fegato alla veneta on polenta
Ingredients: calf liver, onions, extra virgin olive oil, butter, white wine, butter, flour, chicken stock, fresh parsley, corn flour, water, and salt.


Crostini Toscani- Tuscan liver pate crostini
Ingredients: chicken liver, white onion, anchovies, capers, butter, olive oil, white wine, pepper, salt, and crostini bread

Duck breast with apple, celeriac pure and chocolate sauce!
Ingredients: Apples, Sugar, duck or meat stock, dark chocolate, duck, walnuts, pine nuts, almonds, butter, extra virgin olive oil, salt and pepper.
Chocolate and duck make a great combination! This dish was very good.




Florentine Crespelle
Ingredients: Flour, milk, eggs, salt, butter, spinach,ricotta cheese, nutmeg, pepper, parmigiano reggiano cheese, garlic, and extra virgin olive oil.
The only thing that could have made these more delicious would have been Nuetlla and strawberries!

Montepuciano

Seeing an office of tourism in this small town is a bit shocking. I would have thought that there would not have been one. Montepuciano is a very small city.


Although the city is small it does not lack beauty. This city is on the top of a mountain. Being able to see the city from the vineyard earlier in the day made me excited to go. I knew nothing about the city before arriving. The only things I had heard about it were on the bus ride that morning, I had heard a scene from New Moon from the Twilight Saga was filmed here.
The views from this area of Italy are absolutely beautiful. I now know how such a small city had so much tourism.

How can a secret passage way be a secret if there is a sign?? I always like to see what kind of interesting things I can find and here is one of them!


This is a picture of a picture of New Moon being filmed. The city seemed to be very proud to have had one of the largest grossing movies ever being filmed in their home town.
The beautiful alleyways were not only in Pienza!

We had been cooking with black truffles in class so it was interesting seeming them in the store here. I did not know how to ask how much they were in Italian. I know they are expensive but I wonder how expensive.

It seems as though the man would be ringing the bell when it comes time. Unfortunately, I did not get to see that happen!
