This was probably one of my favorite dishes we have made. It was so delicious!
Gnocchi di Patate and Pesto!
Ingredients: Potatoes, flour, egg yolks, salt, basil leaves, extra virgin olive oil, grana padano cheese, Pecorini Romano cheese, pine nuts, garlic, and salt
Pesto was surprisingly easy to make! I will be able to make it when I get back home. It will save me from buying the expensive one they sell at Publix.
Risotto con Bresaola e Bitto!
Ingredients: Carnaroli Rice, Bresaola (horse meat), bitto cheese, butter, onion, broth, wine and salt.
I was surprised by the taste of the Bresaola. I would never imagined horse meat to taste like that. I am not usually brave enough to try new things but I figured why not! The risotto is difficult to make because getting it just right takes a while and you want to make sure not to over cook it.
Pork Filet Confit!
Ingredients: pork fillet, extra virgin olive oil, red onion troprea, red wine vinegar, orange, rosemary, salt and apples.
My favorite part of the whole dish was the red onion and red wine vinegar jam. It added so much flavor to the dish. It is something that can go with so many other dishes like chicken or steak. It was also very simple to make, add the onions and red wine vinegar together and let it cook until the consistency is jam like.
Lasagna!
Ingredients: flour, eggs, salt, celery stalk, carrots, onions, bay leaves, ground beef, ground pork dry Porchini mushrooms, extra virgin olive oil, butter, tomato paste, pepper, white wine, beef or chicken stock, milk, and nutmeg
I was actually not impressed with how the lasagna turned out. I thought it would taste a lot better than it did. I do not think I will make this one again.
Inzimino di gamberi!
Ingredients: Swiss chard, shrimp, shallots, garlic oil, shrimp stock, tomato concasse', salt, and pepper.
Gnocchi alla Romana
Ingredients: milk, butter, semolina, grated parmigiano reggiano cheese, egg yolks, salt, and nutmeg
The first gnocchi was much better. I felt like this one was lacking flavor, it needed like sauce or something like this.
Fettuccine con rucola e gorgonzola
Ingredients: fettuccine, olive oil, mushrooms, tomatoes, rocket, gorgonzola, and pepper.
I think rocket is actually arugula. The taste of the Gorgonzola was very overpowering. If I make this dish again I will only add a small portion of the cheese.
Risotto al Tartufo
Ingredients: Carnaroli rice, white onions, extra virgin olive oil, chicken broth, butter, truffle paste, parmigiano reggiano cheese, and white truffle flakes.
It was my first time trying truffles and I was not sure exactly what to expect. I know that they are very expensive and highly coveted. I did not really taste anything different when trying this dish. I would have imagined the dish to have a more unique taste.
Beef fillet with balsamic vinegar sauce!
Ingredients: lean beef fillets, butter, extra virgin olive oil, balsamic vinegar, port sherry, flour, salt and pepper
This was the first time I had beef while being in Italy. It was very delicious!
Gelato fiordilatte and balsamic vinegar sauce!
Ingredients: Milk, sugar, fresh cream, vanilla, water, lemon juice and heavy cream.
I would have never thought of putting a balsamic caramel mixture on the top of ice cream! This is a recipe that I will definitely be making again. I can not put the ice cream maker I bought for my mom to work!
Fegato alla veneta on polenta
Ingredients: calf liver, onions, extra virgin olive oil, butter, white wine, butter, flour, chicken stock, fresh parsley, corn flour, water, and salt.
Crostini Toscani- Tuscan liver pate crostini
Ingredients: chicken liver, white onion, anchovies, capers, butter, olive oil, white wine, pepper, salt, and crostini bread
Duck breast with apple, celeriac pure and chocolate sauce!
Ingredients: Apples, Sugar, duck or meat stock, dark chocolate, duck, walnuts, pine nuts, almonds, butter, extra virgin olive oil, salt and pepper.
Chocolate and duck make a great combination! This dish was very good.
Florentine Crespelle
Ingredients: Flour, milk, eggs, salt, butter, spinach,ricotta cheese, nutmeg, pepper, parmigiano reggiano cheese, garlic, and extra virgin olive oil.
The only thing that could have made these more delicious would have been Nuetlla and strawberries!
